Collard Greens with Smoked Turkey
Slow-simmered, tender greens with smoky turkey and plenty of pot liquor for your cornbread.

Ingredients
- 2 lbcollard greens
- 1smoked turkey wing or leg, about 1½ lb
- 6 cupschicken broth, check the label if you need gluten-free
- 1 tbspvegetable oil
- 1yellow onion, diced
- 4 clovesgarlic, minced
- 2 tbspapple cider vinegar
- 1 tbspbrown sugar
- ½ tspred pepper flakes
- salt and black pepper, to taste
Method
- Put the smoked turkey and broth in a large pot, bring to a boil, then simmer covered for 45 minutes.
- Meanwhile, wash the greens well in a sink of cold water (twice if they're sandy). Strip out the thick stems, stack the leaves, roll them up and slice into 1-inch ribbons.
- In a skillet, cook the onion in the oil until soft, about 5 minutes. Add the garlic for 1 minute, then tip it all into the pot.
- Add the greens a few handfuls at a time, letting each batch wilt. Stir in the vinegar, brown sugar and pepper flakes.
- Simmer partly covered for 45–60 minutes, until the greens are silky and tender.
- Pull the meat off the turkey, chop it and stir it back in. Season with salt and pepper. Serve with plenty of the liquid.
