Frijoles Charros (Charro Beans)
Pinto beans simmered with bacon, chorizo, tomato and jalapeño. A side that eats like a meal.

Ingredients
- 4 slicesbacon, chopped
- 8 ozMexican pork chorizo, casing removed
- 1white onion, diced
- 1jalapeño, diced (seeded for less heat)
- 2 clovesgarlic, minced
- 2Roma tomatoes, diced
- 3 canspinto beans, 15 oz each, with their liquid
- 1 cupchicken broth
- 1 tspground cumin
- ½ tspdried oregano
- salt, to taste
- ¼ cupchopped cilantro
Method
- In a large pot over medium heat, cook the bacon until crisp, about 6 minutes.
- Add the chorizo and cook, breaking it up, for 5 minutes.
- Add the onion and jalapeño and cook until soft, about 5 minutes. Add the garlic for 1 minute, then the tomatoes for 3 minutes.
- Stir in the beans with their liquid, the broth, cumin and oregano. Simmer uncovered for 25–30 minutes, until slightly thickened.
- Season with salt and stir in the cilantro. Serve in bowls with plenty of the broth.
