Mexican Red Rice
Fluffy, tomato-tinted rice with separate grains. The secret is toasting the rice first.

Ingredients
- 1½ cupslong-grain white rice
- 2 tbspvegetable oil
- ½white onion, finely diced
- 2 clovesgarlic, minced
- 1 can (8 oz)tomato sauce
- 2 cupsvegetable broth
- 1 tspsalt
- ½ tspground cumin
- ½ cupfrozen peas and carrots
- chopped cilantro, to finish
Method
- Rinse the rice in a sieve until the water runs clear, then shake it as dry as you can.
- Heat the oil in a wide pot over medium. Add the rice and stir often for 5–7 minutes, until it smells toasty and many grains turn golden.
- Add the onion and garlic and stir for 1 minute.
- Pour in the tomato sauce, broth, salt and cumin. Bring to a boil, then stir in the peas and carrots.
- Cover, turn the heat to low and cook 18–20 minutes without lifting the lid.
- Turn off the heat and let it sit, covered, for 10 minutes. Fluff with a fork and top with cilantro.
