Smothered Pork Chops
Seared chops simmered low in a rich onion gravy until fork-tender. Serve over rice.

Ingredients
- 4bone-in pork chops, about ¾ inch thick
- 1 tspsalt
- 1 tspblack pepper
- 1 tspgarlic powder
- 1 tsponion powder
- 1 tsppaprika
- ½ cupall-purpose flour
- 3 tbspvegetable oil
- 1 largeyellow onion, thinly sliced
- 2 clovesgarlic, minced
- 2 cupschicken broth
- 1 tspWorcestershire sauce
- ½ tspdried thyme
- cooked white rice, for serving
Method
- Pat the chops dry. Mix the salt, pepper, garlic powder, onion powder and paprika, and season both sides of the chops. Dredge them in the flour and shake off the extra. Save 2 tbsp of the flour.
- Heat the oil in a large skillet over medium-high. Brown the chops 3–4 minutes per side, then set them aside. They'll finish in the gravy.
- Lower the heat to medium. Cook the onion in the drippings until soft and golden, about 8 minutes, then add the garlic for 1 minute.
- Sprinkle in the saved 2 tbsp flour and stir for 1 minute. Slowly whisk in the broth, scraping up the brown bits. Add the Worcestershire and thyme.
- Return the chops and any juices. Cover and simmer on low for 25–30 minutes, until tender and at least 145°F inside.
- Taste the gravy for salt and serve the chops smothered over rice.
