Beef and Broccoli
Better than takeout and faster than delivery: tender beef and bright broccoli in a glossy garlic-ginger sauce.

Ingredients
- 1 lbflank steak, thinly sliced against the grain
- 1 tbspcornstarch, for the beef
- 1 tbspsoy sauce, for the beef
- 4 cupsbroccoli florets
- 2 tbspvegetable oil, divided
- 3 clovesgarlic, minced
- 1 tspfresh ginger, grated
- ⅓ cuplow-sodium soy sauce, for the sauce
- ¼ cupwater or beef broth
- 2 tbspbrown sugar
- 1 tbspoyster sauce
- 1 tspsesame oil
- 2 tspcornstarch, for the sauce
- steamed rice and sesame seeds, for serving
Method
- Toss the beef with 1 tbsp cornstarch and 1 tbsp soy sauce. Whisk the sauce ingredients (⅓ cup soy sauce, water, brown sugar, oyster sauce, sesame oil, 2 tsp cornstarch) in a small bowl.
- Put the broccoli in a large skillet with ¼ cup water. Cover and steam over medium-high for 2–3 minutes, until bright green. Remove and wipe the pan dry.
- Heat 1 tbsp oil until shimmering. Sear the beef in batches, 1–2 minutes per side. Set aside.
- Add the remaining oil, the garlic and ginger, and stir for 30 seconds.
- Whisk the sauce again and pour it in. Let it bubble 1–2 minutes, until glossy.
- Return the beef and broccoli and toss to coat. Serve over rice with sesame seeds.
